Creamy Paleo and Vegan Ice cream

With summer just around the corner and warmer temperatures coming in, my family and I are spending most of our time outdoors in the garden doing gardening, swimming in the pool or even just chilling under the sun. Here in Germany, we have colder days more than warmer days. So when the sun is out shinning, You will see everyone outside on the street or in their garden doing something. They prefer doing outdoor activities when the warmer temperatures hit in. In contrast to my home country Malaysia, where we have warmer tropical temperatures through out the whole year and the people there tend to avoid the sun at all times. We spend our days indoors on our free time most of the time, such as going to the malls or cinema and only in the evenings or at night do we actually go out and enjoy the fresh air. So living in Germany now, I have to adapt to the German lifestyle. The only way for me to keep my body cool while I spend my time outside during the warm days are by drinking lots of fluids such  as water or lemon water and I also love to have ice cream cause it is so refreshing as it is cooling. I love having this healthy ice cream rather than the regular insulin spiking ice cream, while I load up on my vitamin D dosage from the sun. Doesn't mean that when you are trying eat like a cave man and that you are not allowed to eat ice cream at all. Life is beautiful with delicious healthy treats, and my Ice cream is one of them. Its so easy to make and doesn't require an ice cream machine. Its so creamy and taste just like a normal ice cream. I fooled my husband into believing that it is just normal ice cream. He is not really a fan of  bananas. But he was in love with this banana flavored ice cream. The banana flavor is so subtle, that you taste a little of everything in one ice cream. You have the flavors of banana, chocolate and coffee all in one. You wont believe that it is totally dairy free and refined sugar free. So lets get started with the recipe for this dreamily delicious ice cream....



You will need :-
  • 3 frozen riped banana
  • 4 pitted dates (sliced in small pieces)
  • 1 tsp vanilla essence
  • 1 1/2 tbsp cocoa powder
  • 1 shot of espresso
  • dash of coconut milk or almond milk (if required)
  • Popsicle moulder or a container
Method:-
  1. Slice the bananas in small coins and store in a zip lock bag or container in the freezer for at least 3 hours
  2. Remove the bananas from freezer, if frozen overnight, bring the bananas out 15 mins earlier.
  3. Blend the bananas with your dates, cocoa powder, coffee, and vanilla essence till smooth and reach to a creamy ice cream consistency.
  4. If you having trouble to blend the bananas then u can add a dash of your choice of non-dairy milk to make it easier to blend. 
  5. Transfer the creamy mixture into your Popsicle moulder or into a container.
  6. Freeze for at least over night for best results.

Note:-
You can play around with the flavors of this ice cream. If you love berries, then you can add frozen berries instead of  of coffee and cocoa.... Or if you love banana then You can have it pure banana flavor without adding any other ingredients.You can add some honey or stevia to make it more sweet if you find that mixture is not sweet enough, when you are doing the taste test before you freeze the ice cream in the freezer.
