Low carb Paleo pizza (Nut free, Dairy free, Gluten free)
Pizza ia probably the world's most beloved food. Now when you want to lose weight and live a healthy gluten and dairy free lifestyle, it is hard to let go pizza. Those days when I am in need of comfort food, Pizza comes to my mind and all I need to do was to dial the pizza delivery number and in less than 45 minutes the pizza is at my doorsteps. But now since I am sensitive to gluten and dairy, I have to give up on pizza. So being the Foodie me, I never gave up on my quest to eat Paleo version of my favourite comfort foods. So now that I can eat pizza again and I want to share the recipe with you. The key ingredient to be successful with a caveman lifestyle is that you have to be a chef. Forget about buying your cookies and cakes from the local supermarket or bakery even when it is labelled as gluten free or dairy free as it contain unhealthy insulin spiking ingredients. You have start to bake and cook all your food yourself. That being said, lets discuss on how to bake the pizza base first. The pizza base is only made with 2 ingredients,,,, Yes you heard me right. You only need a head of a cauliflower, and eggs. Cauliflower is the star ingredient here and the egg will help to bind the ingredients together. I personally hate cauliflower but in this pizza you will never taste the cauliflower. It taste so good that you will forget that you are eating a cauliflower pizza. Since turning into a paleo chef at home, I have changed my opinions on cauliflower. I have so much respect now for this beautiful white plant. Cauliflower is a rich source of vitamin C, anti oxidants and anti inflammatory properties. Cauliflower also provides high amount fiber. Cauliflower is Nature's gift to us human. Now we have more reason to eat this white beauty. So now lets get started on the recipe.....
PIZZA BASE
INGREDIENTS:-
First step is to slice the cauliflower to small pieces, and the steam it for around 20 mins or until it is soft and cooked. You can also heat it in microwave for about 10 mins. Once it is cooked, let it cool down. After that transfer the cauliflower into a clean cheese cloth, and squeeze the liquid out of the cauliflower. I do this in small batches. Making it easier for me to squeeze the liquid out of the cauliflower. You will be surprised at the amount of liquid it contains. Now you are left with the cauliflower pulp. Transfer the pulp into a bowl, add in two eggs and at this stage you can add some spices and herb for added flavor. I prefer adding some dried oregano , parsley and salt in it. Mix this ingredient well. Now you will transfer the paste on to a baking tray which is lined with a baking sheet. Use your hand to form the paste into a round pizza base shape. You can adjust the thickness to your liking. And bake it for 15 minute more or less, depending on your oven. I bake it in a preheated oven at 165´c.
PIZZA TOPPING
You can use any toppings that you prefer. I used vegetables for my pizza such as mushrooms, boiled potatoes, and spinach. I pre-soaked my vegetables in balsamic vinegar for a few minutes just for to increase the flavor. Once my Pizza dough is baked I spread some tomato sauce and sprinkled some oregano on it On to of the pizza, I added the mushrooms and potato first, and I let it bake for 5 mins. After 5 minutes, take the tray out of the oven and this time add cheese if you prefer, I was to share the pizza with my dear husband and he liked it with cheese. So I sprinkled cheese on one half of the pizza and I added spinach on the pizza as well and allow it to bake for another 8 minutes. Finally drizzle some olive oil and serve it warm.
The next time when you have pizza cravings, do bake this cauliflower pizza. It well spare you from the guilt that you get after you have the heavy gluten filled pizza. This pizza is totally allergy free. If you have allergies to egg the you can try to use flax seed instead of eggs. Do bake this and share this recipe with your friends and family.
