The best Gluten free and Casein free bread ever !!!!

Hello everybody... Today I would like to share the recipe of the best ever gluten free and casein free bread recipe. Over the time, I have baked and experimented with many recipes which called for many ingredients... but the bread always turn out tasting like cardboard and breaking into pieces. I am so glad that I have found this recipe. I have been baking this bread like almost weekly. Even my German husband is a fan of this bread. As you all know the Germans have pretty high standards when it comes to bread. So if my German husband approves it, that means this bread is really good. I stumbled upon this recipe on YouTube after a long quest of  searching a good gluten free bread recipe. The lady who posted this recipe on YouTube was Mama Rosa. May God bless her for this bread. I have modified the recipe a little here n there to my need. The recipe calls for xanthan gum... I refuse to use gums in my bread so I replaced it with psyllium husk. Psyllium husk is loaded with fiber and is a good food addition for people with Crohn,s disease or IBS. The bread is so flexible, it holds a sandwich well without breaking or crumbling and yet its so moist and crisp when toasted.





I used a bread machine to slice the bread to thin slices.





You will need:-

  1. 1 cup sifted chickpea flour 
  2. 3/4 cup rice flour
  3. 1/2 cup of potato or corn starch
  4. 3 tsp psyllium husk
  5. 1 tsp salt
  6. 1 tbsp sugar
  7. 1 packet or 1 tbsp active dry yeast
  8. 2 eggs room temperature
  9. 2 tbsp coconut oil or olive oil
  10. 1 tbsp apple cider vinegar
  11. 1-3/4 of warm water


Method:-

  • Mix ingredients 1-7 all in a big mixing bowl. Mix it well.
  • In another bowl mix the wet ingredients 8-10.
  • Add the wet ingredient into the dry and mix it well
  • Slowly add warm water Lil by little and keep mixing. You will need around 3/4 to 1 cup. so add accordingly.
  • After combining the ingredients together till smooth creamy thick paste like consistency. Transfer it to your bread baking tin which has been greased and lined with parchment paper. 
  • Now let the mixture to rest and rise in a warm area. this will take around 30-45 min. 
  • Once the bread mixture have rise doubled in height and reached to the same level as your baking tin,,, your bread is now ready to be baked in a preheated oven at 170´c for about 55 mins. 
  • Once it has baked let it cool down for a few hours. I normally leave it over night before I will slice them up into thin slices with my bread slicing machine. You can also use a sharp bread knife to slice the bread up. 

Yield:- 24 slices

Life is meant to be lived deliciously.  Even if you have allergies but we can always substitute the ingredients and eat delicious. This recipe is perfect for people with celiac especially children (for their lunch box). Gluten free bread can be so costly and have unwanted additives added to it but by baking your own gluten free bread, you control the ingredients and as well as your cash flow. Do bake this bread and you can thank me later.
